Delicious Chocolate Covered Pomegranate Drops
For all those pomegranate seed (and chocolate) lovers out there, this yummy recipe is for you! These tasty chocolate-covered morsels make an almost guilt-free snack! Put them on top of ice cream for an extra special treat! YUM!
Chocolate Covered Pomegranate Drops
Ingredients:
1 cup pomegranate seeds
4 oz chocolate (milk or dark)
Lay pomegranate seeds between paper towels and ensure their surfaces are dry before starting.
Prep your workspace with a sheet of wax paper on a cookie sheet or other flat surface that will fit inside your refrigerator.
Melt the chocolate in a glass container, such as a Pyrex measuring cup, in the microwave or use a double boiler. Stir while melting and be careful not to burn or scorch the chocolate.
Add the pomegranate seeds to the melted chocolate and fold gently until they are covered.
Drop by the spoonful onto the waxed paper. Work quickly.
Immediately after completing the last step, place the sheet or tray with the wax paper into the refrigerator to allow the chocolate to harden and set. Will be ready in about an hour.
Eat and enjoy!
Post-note: Trader Joe’s sells both organic pomegranate seeds and non-organic pomegranate seeds in a cup. Being health-conscious, normally would recommend getting the organic version of most things, but in this case, the non-organic seeds taste better and seem to last longer. YMMV. You can, of course, get whole pomegranates and peel them yourself or put the kids to work doing it! Trader Joe’s also has terrific chocolate. (No, we don’t get anything from them or profit in any way for the plugs, we’re just fans.)
