Peach Ice Cream Topping

This recipe is a perfectly delicious way to use fresh peaches! So yummy and the perfect amount of sweetness. For another idea on using fresh peaches, see Nana Moe’s Peach Crisp.

Peach Ice Cream Topping

Ingredients:

5 fresh peaches
1/4 C water
1/2 C sugar
1 T cornstarch*
1/2 tsp vanilla extract
1/4 tsp almond extract
1/2 T butter

Directions:

Peel and pit two of the peaches and mash them up. Place the mashed peaches, water, sugar, and cornstarch in saucepan and cook over medium heat, being sure to stir often, until mixture becomes thick.

Add vanilla, almond, and butter to the saucepan. Set aside to let cool a bit.

Cut up 3 peeled, pitted peaches and stir into the above mixture. Chill in refrigerator. Use over ice cream and enjoy!

*Can substitute brown rice flour for cornstarch. To do so, double water amount.
